This was just a basic cinnamon roll recipe I found on the internet and veganized, using Ener-G in place of any egg, soymilk instead of milk, etc. I also substituted whole wheat flour for the regular flour … and that was the downfall of these rolls, I believe. I like to use whole wheat flour since it is healthier and all, but cinnamon rolls are supposed to be junk food and I probably should have just let them be. They were tasty enough, but they were very dense.
So, when I planned to make cupcakes at some point in the future, I sucked it up and bought regular (but organic!) flour.
I forgot to tell you today . . . I just got my copy of vegan cupcakes take over the world! OMG wonderful! I have only made one batch, but I have been dreaming about baking more soon!
They still look fabulous with whole wheat flour, but I definitely agree that there is a time and place for refined, icky, white flour!
